Here’s how you can Dine in with mom this mother’s day; Let’s face it – Mother’s day is here and many of us are already thinking outside the box – how we can still celebrate mom inside the house!

Most of us would have had made plans months out for this special day but as outside gatherings are not being recommended we have to think creatively how to protect our loved ones and still celebrate them.

Our Rose Hall Events team had a chat with our Executive Chef – Anthony Stewart to find out what are some creative meals that we can prepare for mom this mother’s day. In light of Covid-19 we are all practicing social distancing and for many of us dining out is just not an option. But, Chef Stewart came to our rescue with an easy and affordable way to treat mom to a fancy brunch or dinner using what we already have at home.

In keeping with the authentic Jamaican traditions and what we call a strong food! Here’s a creative way to dine in with mom serving some of Jamaica’s Favorite: Bake Chicken, coconut and Jerk sauce.

Bake Chicken in Coconut Jerk Sauce

 

Ingredients:

 

6 pieces Chicken dark meat seasoned with your seasonings of choice (leg, thigh, wing, back)

2 Packs Coconut milk powder dissolve in 2 cups water or 2 cups fresh coconut milk

1 large Onion chopped

1 tsp Thyme chopped

2 cloves Chopped garlic

1 Tbsp Jerk

2 tsp Oil

 

Preparation:

 

Pre-heat oven to 375 degrees

Use oil to grease a 2 or 4-inch-deep baking pan or pot and arrange chicken skin side up (if possible, leaving space between each piece of chicken) and bake until lightly brown in color about 20 minutes.

Combine all other ingredients mix well and pour over chicken and bake until done (about 25 minutes depending on the size of the pieces)

Remove from oven and serve

 

Chef’s note:

 

For a more delicious flavour profile add chopped fresh basil at the end

Goes very well with any whole grain, pasta, rice, mashed potato or a simple salad

For a healthier version use white meat only (breast of chicken)

Leftovers are great in pizza, salad, wraps, mousses, sandwich or omelets
