Treat Mom to a treat this mother’s Day!

Our Rose Hall Events team had a chat with our Executive Chef – Anthony Stewart to find out what are some creative meals that we can prepare for mom this mother’s day. In light of Covid-19 we are all practicing social distancing and for many of us dining out is just not an option. But, Chef Stewart came to our rescue with an easy and affordable way to treat mom to a fancy breakfast or brunch using what we already have at home.

In keeping with the authentic Jamaican traditions and what we call a strong breakfast! Here’s a creative way to treat mom to a treat with Jamaica’s Favorite: Ackee and Breadfruit, on this special day for moms everywhere!

 

 

INDIVIDUAL ACKEE & BREADFRUIT QUICHE

 

Ingredients:

 

1 medium Breadfruit (roasted and slice thin)

3 cups Ackee (cooked in salt water and drain)

1 small Onion (finely chopped)

1 stalk Scallion (finely cut)

2 firm Plum tomatoes (de-seeded and finely diced)

¼ tsp Ground black pepper

2 Tbsp Oil

3 ea. Eggs (lightly beaten) OR 6 egg whites

1 Tbsp Margarine or butter

½ cup Shredded cheese (OPTIONAL)

 

Preparation:

 

Pre-heat oven to 350 degrees

In a skillet use oil to sauté onion and scallion until translucent, add cooked ackee and black pepper and stir. Remove from flame and cool

Drain excess oil from ackee and pour into a bowl, add beaten eggs and tomato and mix with a spoon until all ingredients are evenly incorporated.

Grease muffin cups with butter, instead of pastry dough use thinly sliced roasted breadfruit to line the muffin cups. (both sides and bottom)

Use ackee mixture to fill each lined cup ¾ full and bake for 5 minutes before adding cheese (optional). Bake for another 3-7 minutes. (or test for firmness by using fingers to lightly press in the center of each quiche)

Remove and let sit for 5 minutes and serve warm, garnish accordingly.

 

Chef’s notes:

 

For a healthier product use egg whites and eliminate cheese.

Add callaloo or finely chopped vegetables

Add cooked saltfish or salt mackerel

Add scotch bonnet or jerk sauce for a spicier version

These can be frozen for future use

Great for breakfast, lunch, snacks and entertaining. 

1 quiche + 1 bowl vegetable salad = low calorie dense meal ( A healthy choice)
